Banana Bread

I don't know about you, but I'll take a warm piece of banana bread over chocolate cake any day!  I've always preferred desserts that are fruit based (pies, muffins, pastries, etc.) over rich, indulgent cakes with sweet icing.  Don't get me wrong though, I do love a vanilla cupcake every now and then!  This recipe is easy, delicious and calls for ingredients that most of you probably already have in your kitchen.  I made the recipe a little healthier by using whole wheat flour instead of all-purpose flour and cut back on the amount of sugar used.  Here's what you'll need:

 3 or 4 ripe bananas (I used 4)
1/3 cup melted butter
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
1 cup sugar (I reduced to 3/4 cup)
1 1/2 cups all-purpose flour (I used whole wheat flour)

Mash bananas in a large mixing bowl

Add melted butter, sugar, egg, vanilla and baking soda to mashed bananas and mix
Add the flour last and mix everything together

Preheat oven to 350 degrees
Pour mixture into a buttered 4x8 inch loaf pan
Bake for 1 hour

  5. MMMMM, this sounds DELICIOUS! I'm sure it turned out wonderful :) I take a piece of banana bread over any kind of chocolate, I feel so guilt-free eating it but it's so yummy! You know what else does the trick to keep the bread moist & gooey even after a day or two? SOUR CREAM! Try it, you'll see the difference! Great recipe dear :D xoxo
