1/4 cup butter
1 1/4 tsp baking soda
3/4 cup sugar and 3/4 cup brown sugar
3 cups rolled oats
2 eggs
1 tsp vanilla
1 cup peanut butter
Mix sugar, brown sugar and butter together
Tip: Since I don't own a hand mixer, I melted the butter slightly to make mixing easier
Add eggs, vanilla and baking soda and mix well
Add peanut butter & oats
Tip: You can also add chocolate chips, raisins and/or nuts
Mix everything together
Preheat oven to 350 degrees
Place 1 inch balls of dough on a lightly greased cookie sheet about 2 inches apart
Bake for 10-12 minutes

ReplyDeleteMy sister makes these and they are incredible. Now I've finally found her recipe...she said it was from an oatmeal package. These are from the Trader Joe's rolled oats.
ReplyDeleteI just made these. They were delicious but make sure you make them small or they will crumble. My first pan were 2x2 cookies and fell right apart, I made them smaller for the second batch and they held together quite a bit better (though still not like flour!) I did like them though.
