Lemon Tahini Quinoa Salad

I made this delicious quinoa salad this past weekend with simple ingredients that I always have on hand in my kitchen.  I'm a huge fan of quinoa (you may remember my first quinoa recipe from here) and love that it can be used so many different ways.  This salad can be served warm or cold and is the perfect side dish or healthy mid-day snack. 

1 cup quinoa
Juice from 2-3 lemons
1 can of garbanzo beans, drained and rinsed
1/3 cup tahini sauce
 Chopped parsley

Cook quinoa as directed 
You can use chicken broth instead of water for added flavor (I used water)

Add 1/3 cup tahini sauce while quinoa is still hot (this makes mixing a lot easier) 
Add garbanzo beans, fresh squeezed lemon juice and chopped parsley
Mix everything together with a spatula

Yum!
