Yes, I know...another quinoa recipe. I simply couldn't resist sharing this one. I originally bought these veggie patties from Whole Foods and couldn't believe how good they were. Needless to say, I was pretty happy when I found the recipeon their website and was able to make them myself. They're easy, healthy and delicious which is everything I look for in a great recipe.
Spinach, carrots, yellow squash
Zest from 1 large lemon
Combine all ingredients
Form into patties
Bake for 25 minutes and serve with lemon yogurt sauce
