Healthy Chicken Fried Rice

I had a totally random pregnancy craving for chicken fried rice this past weekend.  I know that ordering it from a Chinese restaurant is far from healthy, so I decided to make my own healthier version using minimal oil and organic ingredients.  I pretty much made this recipe up as I went along so there are no exact measurements.  It's super easy to make, serves 2-3 and tastes so good!  Here's how I did it:

Heat 1 tbsp olive oil in a wok
Scramble 2 eggs, remove from wok and set aside
Saute chopped onion and 1/2 tsp of crushed garlic until golden - about 2-3 minutes
Add 1 tsp sesame oil
Add diced chicken breast (I used 1 large chicken breast), season with black pepper
Cook chicken all the way through
Add handful of snow peas, bean sprouts and chopped broccoli - mix together and saute for 2-3 minutes
Add cooked brown rice*
Add scrambled eggs that have been set aside
Add soy sauce (however much or as little as you want)
Sprinkle with sesame seeds, mix everything together and cook for 2 minutes longer

*For the brown rice, I used 1 bag of Trader Joe's fully cooked organic frozen brown rice.  All you have to do is heat it in the microwave for 3 minutes.  So easy!

  24. I love a good stir fry, but for some reason I've never attempted fried rice. This is getting added to this week's dinner menu, thank you for sharing. I also love that bowl, it's the perfect shape for a rice dish!

  26. this sounds great! In college we used to make a healthy version quite similar to this. Thank God for those pre-cooked rice packages from TJ's!
