Half package Capellini pasta (angel hair)
1-2 cups cherry tomatoes, halved
1/4 cup fresh chopped parsley or basil (I used parsley)
2-3 garlic cloves, finely chopped
1/4 cup extra virgin olive oil
Juice from 2 lemons
Salt, pepper and grated Parmesan cheese
Heat skillet on medium heat and pour in olive oil
Add chopped garlic and stir until it softens and becomes fragrant (about 1 minute)
Add lemon juice and remove mixture from heat - set skillet aside
Cook angel hair pasta as directed
Drain pasta well and return pasta to pot
Pour the garlic/olive oil/lemon juice mixture over pasta and toss it well
Add the chopped tomatoes and parsley
Season with salt and pepper
Sprinkle with grated Parmesan cheese
Enjoy!
