Baked Quinoa n' Cheese

If there's one comfort food that I have a major weakness for, it's macaroni and cheese.  It's one of those dishes that I could easily eat everyday, but don't.  Being that I always try to make healthier alternatives to rather indulgent meals, I decided to experiment in the kitchen and make my own version using my favorite grain, quinoa.  While it's definitely not as decadent as traditional mac n' cheese, it certainly satisfied my craving without any of the guilt.  Here's how:




 
Ingredients:
1 cup quinoa
Vegetable of your choice - I chopped up several broccoli florets
2 cloves garlic, crushed
chopped onion
1 1/2 - 2 cups cheese of your choice - I used low fat cheddar, mozzarella and monterey jack
1 cup low fat or fat free milk
2 large eggs
Ground black pepper
Panko bread crumbs
Salsa

Directions:
Cook quinoa as directed
Meanwhile, saute garlic, onion and broccoli until broccoli softens slightly (about 5 minutes)
Whisk together milk and eggs in a large bowl
Add cooked quinoa, broccoli and cheese to the milk/egg mixture
Add a pinch of ground black pepper
Stir everything together
Transfer to a lightly coated 13 x 9" baking dish
Top with Panko bread crumbs
Bake at 350 degrees for 30 - 35 minutes
Top with fresh salsa or hot sauce
Enjoy!
