Cheesy Broccoli Bites

Cheese has always been a huge weakness for me.  So naturally, I love just about any recipe that incorporates cheese.  If you're looking for a tasty, healthy snack that's easy to prepare then you need to try these cheesy broccoli bites.  They're perfect for parties, kids and adults (my husband even liked them!).  Here's how:

 




Ingredients:
12 oz bag of broccoli florets
1 1/2 - 2 cups shredded cheese of your choice (I used a blend of cheddar, jack & mozzarella)
3 large eggs
1 cup breadcrumbs (seasoned or unseasoned)
Salt and pepper 

Directions:
Steam broccoli until tender (about 5 minutes)
Preheat oven to 375 degrees
Line a baking sheet with parchment paper 
When broccoli is ready, chop it up a little bit and mix all ingredients together in a large bowl
From into small patties
Bake at 375 degrees for 25 minutes, turning the patties over halfway through
So easy!

  5. I am definitely trying these! Being a vegetarian I eat broccoli at least once a week and there is no better combo than broccoli and cheese. These really look delicious and easy to do. I think I might try them tonight lol
