Apple Berry Breakfast Quinoa

I love quinoa but have never had it for breakfast until now.  I ran out of oatmeal the other day and decided to add a few sweet ingredients to warm quinoa.  It made for a healthy, protein packed breakfast that was perfect with my morning cup of coffee. 






Ingredients:
1 cup quinoa
1 apple, peeled and diced
1 tsp cinnamon
2 tsp vanilla extract
fresh blueberries
 1/2 cup unsweetened applesauce
sliced almonds

Directions:
Cook quinoa with 1 1/2 cups water, cinnamon and vanilla extract
Cook for about 15 minutes or until quinoa can be fluffed with a fork
Mix cooked quinoa with applesauce
 Add diced apples, blueberries almonds
Sprinkle with cinnamon
Enjoy!

  3. I love quinoa and oatmeal...I never would have thought of making quinoa as a morning substitute for oatmeal. It looks yummy and I am definitely going to have to try this recipe!

  4. This looks delicious! And super healthy. I always use quinoa as a summer salad with feta, tomatoes and fresh herbs. I never thought to use it for breakfast. Thanks for the inspiration!
