What can I say, I've been on quite the food kick this week. Like so many other people, I LOVE a great chopped salad. Have you noticed that a salad tastes so much better when it's all chopped up? Seriously, why is that? Instead of paying $14 for a chopped salad at my favorite local restaurant, I decided to make my own with a slightly healthier twist. I followed this recipe, but substituted turkey bacon for regular bacon and used light mozzarella (simply cut up light string cheese) instead of feta. If I didn't use up all of my chickpeas in this recipe, I would've thrown those in too. The end result was SO delicious that I may or may not have had this salad for lunch the past 3 days in a row.
