Lemon Arugula Pizza

I love pizza.  I mean, I REALLY love pizza.  If I could eat it every single day, I would.  My husband and I love to make pizza at home, and it's a lot easier than you think.  Especially if you're like us and buy prepared pizza dough.  As much as I love a traditional slice with gooey cheese, tomato sauce and mushrooms, I wanted to try something a little different.  I came across this recipe for lemon arugula pizza and it did not disappoint.  The combination of mozzarella and freshly grated parmesan cheese combined with arugula and fresh squeezed lemon is just too good.  

store bought pizza dough (I bought mine at Whole Foods)
corn meal or flour
bagged arugula
olive oil
freshly grated parmesan cheese 
shredded or sliced mozzarella
1 lemon
black pepper

preheat pizza stone in oven for 15 minutes at 400 degrees
sprinkle corn meal or flour on whatever surface you're using
cut pizza dough in half
using a rolling pin, roll the dough out into a circle (I prefer my pizza on the thinner side)
sprinkle corn meal or flour on the warmed pizza stone and place dough on the stone
brush olive oil on the pizza dough
top with mozzarella and parmesan cheese (as much or as little as you like)
place pizza in oven and bake for 12-15 minutes or until crust is golden and cheese is melted
remove pizza from oven and top with arugula, fresh squeezed lemon juice and black pepper
garnish with more grated parmesan
slice and enjoy!
