Smashed Chickpea and Avocado Sandwich

I know this is a bold statement, but this might just be THE most delicious sandwich I've ever had.  I found this mouthwatering recipe online and had to make it for myself.  The most time consuming part of preparing this sandwich is peeling the skin off of the chickpeas, but trust me when I say the end result is SO worth it.  Who would've guessed that an avocado smashed with chickpeas and fresh lime juice results in taste bud heaven.  Seriously, my mouth is watering just writing this post.  YUM!

Ingredients:
1 (15 ounce) can chickpeas or garbanzo beans
1 large ripe avocado
2 tablespoons chopped green onion
Juice from 1 lime - the lime is KEY!!
Salt and pepper, to taste
Bread of your choice (I used whole grain)
Sprouts, tomatoes, spinach leaves or whatever sandwich toppings you like (I used micro greens)
The original recipe calls for cilantro, but I left it out because I'm not a big cilantro fan

Directions:
Rinse chickpeas and peel the outer skin off (this takes about 10-15 minutes)
In a medium bowl, mash the chickpeas and avocado together with a fork or potato masher
Add green onion, lime juice, salt & pepper
Spread onto bread and top with greens, tomato, etc.
