Cauliflower Tots


So, I'm rather obsessed with these cauliflower tots.  I've been devouring them daily along with the spinach quinoa patties I made last week.  They're insanely delicious and ridiculously easy to make.  As you can tell, I'm all about healthy food that I can eat throughout the day.
Warning: they're so good that you'll want to eat the entire tray.  Trust me!




Ingredients:
2 cups steamed cauliflower florets (I used one 12oz bag), finely chopped*
1 large egg
1 large egg white
1/2 cup onion, minced
3 tbsp minced fresh parsley
1/2 cup reduced fat 3 cheese blend, shredded
1/2 cup seasoned or plain breadcrumbs
salt and pepper to taste
cooking spray

Directions:
Preheat oven to 375°F.  Spray a nonstick cookie sheet with cooking spray
 In a medium bowl, combine all of the ingredients and season with salt and pepper to taste
Spoon 1 tablespoon of mixture in your hands and roll into small ovals
Place on the cookie sheet and bake for 20 minutes, turning halfway through cooking until golden
*To cook cauliflower florets, simply steam in a little bit of water covered for 4-5 minutes until soft (not mushy).

    1. you can get an egg replacement at health food stores. I"m not sure if it would work with this recipe but it's worth a try

  7. I have this big cauliflower sitting in my fridge, that stares back, whenever I open the refrigerator, because I dont know what to do with it. Sometimes I feel its such an useless vegetable. But this recipe is so cool! And I am gonna make my Cauli happy today! :D
