Spinach Quinoa Patties

You guys, these are DELICIOUS.  I made these patties in an attempt to keep my fridge stocked with healthy food that I can eat on the go.  Let's just say they were so damn good that I had to make another batch the very next day.  Not only are they seriously amazing alone, they're even better served on a lightly toasted bun with melted cheese.  Yum!




Ingredients:
1 cup uncooked quinoa
4 eggs, whisked
1/3 cup parmesan cheese
3 scallions, sliced thin
3 cloves garlic, minced
1/2 tsp salt
1 cup steamed spinach (fresh or frozen)
1 cup plain breadcrumbs
1 tsp olive oil

Directions:
Cook quinoa as directed
In a large bowl, combine cooked quinoa, eggs, scallions, parmesan cheese, garlic, salt, spinach and breadcrumbs
Let the mixture sit for a minute to absorb the liquid (mixture should be moist, not runny)
Form into patties (1/4 cup each)
Heat oil in a large non stick skillet
In 2 or 3 batches, cook the patties (covered) over medium low heat for 8-10 minutes on each side or until browned and golden
