Wheatberry and Wild Rice Grain Salad

Say hello to my favorite new grain - the wheat berry.  If you spend as much time as I do in Whole Foods, then you've probably had their wheat berry salad.  If not, you need to try it because it's delicious.  I really wanted to make my own, so I scoured the Internet for wheatberry salad recipes.  Unfortunately, I could not find the Whole Foods recipe, but I did find a few that seemed to be pretty close.  Dried cranberries and chopped almonds were a must, so I decided to combine several recipes and came up with the most delicious end result.  Here's what I did:

Ingredients:
2/3 cup wild rice
1 cup wheat berries
1 tablespoon olive oil
1/3 cup chopped onion
2 garlic cloves, minced
1/2 cup chopped almonds
1/2 cup chopped dried cranberries
2 tablespoons maple syrup
1/3 cup orange juice
2-3 tbsp balsamic vinegar
1 teaspoon fresh thyme
Salt / Pepper, to taste
Directions:
Cook wild rice and wheat berries as directed
Heat olive oil in a small sauce pan
Cook onions for about 5 minutes or until they are soft, then add garlic - remove from heat
In a small bowl, whisk together orange juice, maple syrup and balsamic vinegar
Mix all ingredients together (except for OJ/maple syrup/balsamic)
Slowly add in the OJ mixture until you've achieved just the right taste
Season with salt/pepper and fresh thyme
Serve warm or cold
