Gnocchi with Sausage and Kale

 Like gnocchi?  I mean, who doesn't right?  Words can't adequately describe just how yummy this dish is.  I followed this recipe, but made a few "healthier" modifications.  I used chicken sausage and instead of making a parmesan cheese sauce, I simply sprinkled parmesan cheese on top after it was done cooking.  It was bursting with flavor and best of all, my husband AND daughter both loved it.  Oh, and did I mention it takes less than 30 minutes to prepare from start to finish?  Definitely my kind of recipe!
 
 Ingredients:
 1 package store bought gnocchi  (I got mine at Trader Joe's)
  1 tsp extra-virgin olive oil
1/2 onion, diced
4 cloves garlic, minced
  3 chicken sausages, casings removed and crumbled with your hands
1/2 tsp all-spice 
   1/4 cup white wine or broth (I used broth)
10 cups roughly chopped kale
pinch of coarse salt and freshly ground pepper
1/4th cup parmesan cheese, plus more for garnish

Directions:
Heat the oil in a large skillet over medium-high heat
 Add the onions and sauté until soft (3-4 minutes)
Add the sausage and all-spice; continue to sauté until the sausage is browned all over (5 minutes)
Add the garlic and sauté one more minute
Add the kale and broth (or wine). Season with a pinch of salt and pepper
Toss until the kale has wilted and is bright green (I used a lid to quickly wilt the kale)
In the meantime, cook the gnocchi in boiling water for 3 minutes
Add the gnocchi to the sausage and kale mixture; toss to combine
Serve hot with sprinkled parmesan cheese
Enjoy!
