What does one do with left over quinoa? Make pancakes of course! I came across this recipe for lemon blueberry quinoa pancakes and let me tell you, they are GOOD. In fact, they're so damn good, you'd never know that you're eating something so healthy. They're light and fluffy, packed with protein and will keep you satisfied all morning long. So if you plan on making pancakes this weekend, go ahead and give these a try. You know you want to!
Ingredients:
1 cup cooked quinoa
3/4 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon coarse salt
3 large egg whites
1/3 cup non-fat plain greek yogurt
2 tablespoons of milk of your choice
1 tablespoon fresh lemon juice
1 tablespoon brown sugar
1 teaspoon pure vanilla extract
2/3 cup fresh blueberries
1 cup cooked quinoa

Directions:
In a medium
bowl, whisk together quinoa, flour, baking powder and salt
In another
medium bowl, mix together egg whites, yogurt, milk, and brown
sugar until smooth
Add egg mixture to flour mixture and mix to
combine
Add vanilla and lemon juice and mix again
Next gently fold in blueberries
Lightly
coat a large nonstick skillet or griddle with cooking
spray and heat over medium heat
Drop batter by 1/4 cup onto skillet
Cook
until bubbles appear on top, about 2 minutes
Flip and cook until
golden brown on underside, 2 more minutes
Repeat with
more cooking spray and remaining batter
Makes about 8 pancakes
