A healthy and declicious alternative to french fries? Yes please! When I came across
this recipe for rosemary parmesan polenta fries, I had to make them. And yes, they're just as yummy as they look. This was my first time trying a polenta recipe and I'm officially hooked. So good!
Ingredients:
1 18 ounce tube Organic Ancient Harvest Quinoa Polenta
2 tablespoons extra virgin olive oil
1/2 cup grated parmesan cheese
1/8 to 1/4 cup chopped fresh rosemary

1 18 oz tube polenta (I used basil garlic)
1 tbsp extra virgin olive oil
1/2 cup grated parmesan cheese
1/4 cup fresh chopped rosemary
Directions:
Preheat oven to 425 degrees
Remove wrapper and cut polenta tube in half then cut into fries
Place polenta on a baking sheet lined with parchment paper and brush fries with olive oil
Place in oven and bake for 45 - 50 minutes, turning every 15 minutes
When fries are done baking, top with rosemary and parmesan
Yum!
