I'm not sure if this is an L.A. thing or not, but Açaí bowls (pronounced ah-sigh-ee) seem to be everywhere around here. After seeing countless people eating them, I had to give one a try. Not only are they extremely healthy, they taste absolutely incredible. Seriously, I could eat one every.single.day. It's the perfect breakfast, lunch or post workout snack that's filling and packed with vitamins and antioxidants. If you're not familiar with the health benefits of the Açaí berry, just do a quick Internet search and you'll be amazed. Instead of paying $8+ for an Açaí bowl at my local juice bar, I decided to make my own at home. The end result was just as good, if not better! Here's how:
2 frozen Açaí berry smoothie packs (I found mine at Costco, but most health food stores carry them)
2 - 3 bananas
1/2 cup coconut water (you can also use juice, rice milk or almond milk)
Berries (I used strawberries)
Handful of low-fat granola
Blend 2 frozen Açaí berry packs (packs must be frozen or the end result will be too watery) with 1 1/2 bananas and 1/2 cup coconut water until you have a thick, pudding like texture (about 5 seconds).
Top with sliced banana, strawberry, granola and coconut flakes.
Serve right away and enjoy!
