Homemade Carrot Soup

I have one word to describe this soup.  Amazing.  It's beyond delicious and incredibly healthy.  Did I mention that it has NO dairy or cream in it?  The main ingredients are celery and carrots.  That's it.  If you're looking for a good summer soup that's easy to make, then you need to try this one.  Trust me, your stomach will thank you.

2 pounds of whole carrots
1 onion chopped
1 tbsp olive oil
4 celery stalks
Salt and fresh cracked pepper to taste
1 tsp curry powder (optional...I didn't use any)
About 4 1/2 cups of water, chicken or vegetable broth
If using water, add chicken soup powder for flavor (I used the chicken broth packets from Trader Joe's)

Peel and cut carrots
Cut celery
 Heat olive oil in a large sauce pan over medium heat and sauté onion for about 3-4 minutes
Add carrots and celery and sauté for about 5 minutes
Add enough water or broth to cover carrot/celery mixture with about 1/2 inch extra 
Season with salt and pepper
Cook covered over medium-low heat for about 30 minutes or until carrots are soft
Transfer to a blender in batches and puree until smooth
Serve hot or cold
